{"id":2693,"date":"2010-07-29T18:12:00","date_gmt":"2010-07-29T18:12:00","guid":{"rendered":"http:\/\/www.pursuetheoutdoors.com\/field-journals\/2010\/07\/29\/wild-game-marinade\/"},"modified":"2011-03-07T08:47:31","modified_gmt":"2011-03-07T16:47:31","slug":"wild-game-marinade","status":"publish","type":"post","link":"https:\/\/www.outdoorblog.net\/pnwbowhunting\/2010\/07\/29\/wild-game-marinade\/","title":{"rendered":"Wild Game Marinade"},"content":{"rendered":"<p><span style=\"color: #888888\">Wild game can dry out quickly due to the low fat content.\u00a0 I love to marinate all my game with either of these simple recipes.\u00a0 The first\u00a0was just an extension of using plain merlot red wine.\u00a0 You simply whisk red wine, a couple table spoons of extra virgin olive oil, fresh garlic (crushed), and thyme and marinate steaks\u00a0for an hour or so.\u00a0 Grill on hot grill for a few minutes per side. Killer results everytime.<\/span><\/p>\n<p><span style=\"color: #888888\">The second recipe is one I picked up\u00a0while watching\u00a0a cooking show.\u00a0 The host was marinating some quail and mentioned that the recipe was also fabulous on venison so I jotted it down and have used it ever since.\u00a0 Here you go: <\/span><\/p>\n<div><span style=\"color: #888888\">\u00a0<\/span><strong><span style=\"color: #888888\">1\/3 cup Balsamic Vinegar<\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">1\/8 cup extra virgin olive oil <\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">1 tbsp minced fresh thyme <\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">2 cloves fresh crushed garlic <\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">2 tbsp dijon mustard <\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">2 tbsp Worchestershire sauce <\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">A few shakes of your favorite seasoning salt (I use Johnny&#8217;s or Cabela&#8217;s) <\/span><\/strong><\/div>\n<div><strong><span style=\"color: #888888\">\u00a0<\/span><\/strong><\/div>\n<div><span style=\"color: #888888\">Marinate meat in a glass bowl or Zip-Lock bag for 2-8 hours (not critical) and grill to your liking.\u00a0I cut all my deer and elk backstraps into 6 to 8\u00a0inch\u00a0&#8220;logs&#8221; so I can grill them whole then slice before serving.\u00a0 This seals in the moisture and keeps the meat from drying out.<\/span><\/div>\n<table class=\"tr-caption-container\" style=\"float: left;margin-right: 1em;text-align: left\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td style=\"text-align: center\"><a href=\"http:\/\/3.bp.blogspot.com\/_s-_-Phtl6C0\/TFMd8efVZDI\/AAAAAAAAAUs\/2K9-gphNo-c\/s1600\/IMG_0061.JPG\"><span style=\"color: #888888\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/3.bp.blogspot.com\/_s-_-Phtl6C0\/TFMd8efVZDI\/AAAAAAAAAUs\/2K9-gphNo-c\/s320\/IMG_0061.JPG\" border=\"0\" alt=\"\" width=\"320\" height=\"179\" \/><\/span><\/a><\/td>\n<\/tr>\n<tr>\n<td class=\"tr-caption\" style=\"text-align: center\"><span style=\"color: #888888\">Elk Tendloin<\/span><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<div><span style=\"color: #888888\">For best results, I brown the outside on high heat, then insert a meat thermometer into the end running lengthwise into the thickest portion. After searing the outside to seal in the juices, I turn off one burner and move the roast to that side. I turn up the other side to high and cook with indirect heat until the thermometer reads 150 degrees.<\/span><\/div>\n<p><span style=\"color: #888888\">Then I remove the roast from the grill, tent with foil on a plate, and allow the internal temperature to climb to 160 (beef\/medium) on the countertop. Slice and serve with fresh steamed veggies and potatoes.
